4-ingredient popcorn protein bars


These protein bars are very crunchy. Honestly they’re also a bit dry but the big advantage is that you can keep them in a tupperware for several days without worrying about them going bad.

4 Ingredients

Ingredients (for 6 bars):

– 3 cups unsalted unsweetened popcorn
– 1 cup whey protein powder
– 1/2 cup coconut milk (I didn’t use reduced-fat coconut milk but I guess it should also work with reduced-fat coconut milk)
– 1/4 cup goji berries (or any other dried fruits)

It may be a good idea to soak the dried fruits you’re using in warm water before. This will prevent them from drying out too much when baking the bars which is what happened to the bars I made.


I made the unsalted/unsweetened popcorn by popping corn in the microwave. I then put the 3 cups of popcorn in a resealable plastic bag and crushed it with my hands to get smaller bits of popcorn.


I mixed the protein powder and the coconut milk together before adding the other ingredients to avoid lumps. I then added the other ingredients and put the mixture into a baking dish.

Mix ready to go in the oven

I baked the batter at 200 degrees Celsius for 15 minutes until it got golden-brown.

Estimated nutrition facts per bar: 182 kcal, 16 g of protein, 7 g of carbs, 2.5 g of sugar, 10 g of fat.
